Protein-Packed, No-Bake Bites

So nice, they deserve to be posted twice…..for the OG  seersucker crew, you know the drill with these insanely tasty cookies…..so easy, so addictive, and a crowd pleaser.   For the new folks, allow me to introduce you to my Protein Peanut Butterscotch Cookies……

Ingredients Needed:

    •    1 Bag Butterscotch Chips

    •    1 Cup Peanut Butter

    •    2 cups Peanuts

    •    Vanilla Protein Powder

In a microwave-safe bowl, melt butterscotch chips. Add peanut butter and stir to combine. Add peanuts and a scoop of protein powder and give it another good stir. Drop large dollops onto a baking sheet, lined with wax paper. Place in freezer for 15-20 minutes. I like to store them in a COOKIE JAR at room temp.

You've been forewarned, these no bake protein cookies are addictive!!!

And while we’re on the topic of irresistible treats, I have Instagram to thank for this protein packed spin on my version of a Reece’s cup protein mousse….another no baker so I’m already a fan!

Take your fave Greek yogurt (I love siggis plant based) and mix in Justin’s PB PROTEIN.

Melt your fave nut butter and mix with the Greek yogurt/protein mixture.  Fill up a ramekin and top with melted chocolate chips (I melt with a bit of coconut oil to give that smooth texture)….set in the fridge for about 30 mins or so to create a chocolate shell and voila….dessert is served….and delicious!!
