Blame it on my time in Kentucky.... but dang it, this shrimp and cauliflower grits dish has my (low-carb) heart. This hearty, healthy meal is just as easy as it is tasty.

Ingredients:

  • Raw shrimp, fresh or frozen
  • Chili Lime seasoning
  • Avocado Oil
  • Mashed Cauliflower, frozen
  • Goat Cheese
  • Sriracha Ranch Dressing

If using frozen shrimp, stick it in a colander and thaw by running under cold water for 5-10 minutes. Pat shrimp dry with paper towel. Season shrimp with a boatload of chili lime seasoning. Heat avocado oil in a large skillet over medium-high heat. Add shrimp and cook, tossing for 3-4 minutes until the shrimp is cooked through. Heat avocado oil in a saucepan over medium-high heat. Add frozen mashed cauliflower (without adding any water). Stir and heat through. Add a generous amount of goat cheese and stir until combined. Build your bowl: spoon cauliflower grits into a bowl, top with shrimp, and drizzle with Sriracha Ranch and GO. TO. CHOW. TOWN.
