Bark, Bytes & a Bonus
After falling hard for THIS DATE RECIPE, I wanted to whip up a variation because I cannot get enough of a good ‘ol date—rich in fiber, antioxidants, and vitamin B—they not only help me hit my CARB goals, but man do they cure my sweet tooth. Ok so let’s get to the bark…it so dang simple my friends. Simply line a baking sheet with parchment paper, open up your dates, and smoosh sticky side down…..you essentially want to create one big fat date! Then I melted my nut butter and added my favorite PROTEIN POWDER. Spred that over your smooshed dates and melt your chocolate with coconut oil (you can do dark, cacao nibs, etc) and spread a layer over the peanut butter. Finish with some salt flakes, set in the freezer, and voila…..you are READY to devour….which I have no doubts you will!! I just break mine apart like you would Christmas peppermint bark….I loosely calculated the macros based on my personal portions and one serving has approximately 68 grams of Carbs (told ya they help hit that carb goal), 7 grams of Fiber, 15 grams of fat (hello nut butter), and 10 grams of Protein.
